There are a few factors you have to consider> 1. the time you have to prepare. 2. The amount od ingredients on hand 3. The amount of perfection you demand of yourself.
1. If you have to be out of the house to do things I would suggest the slow roast at 225 degrees for 2 or even 3 hours, or for whatever time you'll be away. Make sure your chicken is well seasoned with a mix of paprika, granulated garlic,black pepper, Kosher salt, and whatever other herbs you and your family like. Chop up one onion. two carrots or more if you like, parsley, chopped, some celery. Put your seasoned chicken on top of the veggie mix, add 2 cups of water or broth, and some wine if you have it. Put this, uncovered in the slow oven , do what you had to do for 2 hours or so and the work is done.If you want to brown the top , remove chicken from oven, set broiler to high, put the chicken under while watching for a few minutes. Be sure you still have liquid in the pan. 2. The quick high bake: Preheat your oven to 420 degrees, prepare your mixed vegetables the exact same way as for slow roast. Be sure the chicken is patted off and dry before you season it. Roast for 25 minutes, do not open oven door, then lower to 300 for another 25 minutes. Remove and let stand.
I am looking for the BEST flourless chocolate cake recipe and I hear you have it! And quick because Pesach is coming!!!!!!! Can you be specific about what chocolate you use? I am always a bit confused about baking chocolate vs. regular old delicious eating chocolate.

Hi Eric, I sure hope you weren't planning to make those crunchy string beans in April, or for that matter May,June,July oh you know what I mean. Here's the trick to make crunchy beans ala the kind you get in the Chinese restaurant, or at least the kind we get here on Long Island: To wit:for l1lb string beans.1.Place a cup of cornstarch in a large flat pan, toss the stringbeans in the cornstarch the the beans are coated lightly. Remove. Another coating technique is to use a supermarket brown bag, add your cornstarch and toss the beans in the bag. I like this technique better that's why I'm always saving supermarket bags. Any way, start heating your oil in the wok. Use enough oil to come up about 2 inches in your wok. heat oil to at least 350 or 325 or when a 1 inch cube of bread when dropped into the oil browns immediately. Gently place the string beans into the oil using a slotted spoon, try not to plop the beans so as not to burn your arms with hot oil. the beans will start to look crisp in about 1 or 2 minutes, remove with the slotted spoon, Ideally a different one so you can keep the first one clean.Drain beans . If you want to make them Chinese style,refry them in 2 Tbl oil , add 2 Tb soy sauce mixed with 1 tsp sugar and 2 garlic cloves peeled and minced. Hope this helps somewhat.
